In a pot or casserole dish, add beer, onions, 6 Tbsp butter, peppers, jalapeño and pinch of salt. Bring to a boil the reduce the heat to low and simmer for 10–15 minutes.

Carefully add brats to the simmering liquid and allow them to cook gently for about 15 minutes, or just until brats are cooked through. Remove brats from the beer mixture then strain the onion, peppers, and jalapenos, put on the side.
Discard the beer then place the onions, pepper and jalapenos mix into the pot with the additional 2 tbsp butter — continue cooking on medium until they begin to brown and caramelize a little, 10-12 minutes.
Season with salt and pepper to taste, transfer to a serving dish once done.

In a pan or on the BBQ, grill the brats for 5–6 minutes. Since the brats have already been cooked through, only grill them until they are nicely browned and crispy with that wonderful grilled flavor.

Serve brats immediately on fresh baked hotdog buns or a tiger roll, pile the onion, pepper and jalapenos mix, add any of your favorite toppings — try a little sauerkraut and whole grain mustard for some added flavor.
